French Toast Heaven with Peaches and Caramel Sauce

There was a bread sale for the past few weeks so I purchased 2 loaves of Texas style white and wholewheat.  This is a lot of bread and the freezer was full so it gave me the idea to make french toast but since I had some nice prosciutto and fresh pistachios, I thought I would kick it up a notch!

I usually use white bread but whole wheat works and I’m converted now.  For this recipe, anything with this sauce would taste good. I’m thinking of creating  some dessert recipes down the road.

Ingredients are as follows:

  • 6 slices of texas style bread (thick and not too fresh) (I slice them in half)
  • 6 eggs
  • 1 can 12 gram sliced peaches (or slice them after), drain syrup can freeze for baking use.
  • 1 cup brown sugar
  • 3 tbsp butter
  • 2 tbsp water
  • pinch Cardamon powder (optional)
  • pinch cinnamon (or 1/8 tpsn)
  • 1 O% fat Astro Vanilla Yogurt (individual serving size)
  • 1/4 cup cream 10%
  • 1/2 cup milk 1%
  • 2 drops blood orange infused olive oil from Olive-it.

Directions:

Toast your (shelled) fresh pistachios until golden, not burnt but nice roasted flavour.

Bake your thin prosciutto in oven or toaster oven until crisp.  This is so versatile and flavourful.  Makes food looks sexy and it tastes great.

Set the above aside until ready to plate your beautiful breakie.

In small saucepan, melt your butter, add your brown sugar and water.  Mix well and watch, do not overcook or it will harden.  Add peaches without the syrup) When starting to thicken, remove and keep warm.

Slowly add 1 serving of Astro Yogurt, (I used one individual serving size) Vanilla and mix well.  Adds a nice vanilla flavour and little slight creaminess and reduces some of the sweetness (although this is a very sweet addictive sauce).  Add 2 drops of the blood orange and this just really makes it special. Mix your eggs, milk, dry spices and beat with hand beater.

Dip your bread, coat well so it absorbs in bread, ensure your pan is hot and use  canola oil or grapeseed oil.

Cook well both sides, bread should puff up a bit.  Any extra eggs, just drip over last few break slices.

Enjoy and indulge and share with your guests.
