Spanish Rice


This is my version of Spanish rice for this particular meal.


  • Uncle Bens Rice ( 12 people)
  • 2 cups rice
  • 4 cups water
  • 4 teaspoons of butter or margarine
  • 2 teaspoons of cumin
  • 2 teaspoon of paprika
  • 1 teaspoon oregano (dried)
  • 1 teaspoon of salt
  • Stock (chicken) for 12 (I used the new Knorr Home Style Stock packets, about 1 1/2.
  • Chunky Salsa



  • Cook Rice according to directions
  • Once cooked, ensure it is not too sticky.  Sometimes helpful to cool it and then add salsa later.
  • For salsa to rice (I added ½ cups, you can add more if you like)
  • Also optional fresh tomatoes, hot peppers, finely chopped scallions, chives, or a few olives for décor, small pieces of asparagus or mushroom.

 (Asparagus was a popular food in Barcelona, Spain but mushrooms also taste great in rice)
