Nicky’s ‘All in One’ Burger Salsa
(serves 3 – 4 burgers)
Ingredients:
- 1 pickle finely diced
- ½ red onion finely diced
- 2 corn of cob kernels (cooked then removed when cooled) Can substitute frozen corn
- 1 garlic clove finely chopped
- Cilantro
- 1/8 tsp cumin powder
- Salt & Pepper to taste
- 4 – 6 dashes of hot pepper sauce
- 2 Tsp ketchup
- 1 tsp mayo
- 1 tsp regular mustard
- 1 Tablespoon or so of Lime
(for 12 burgers, I tripled the recipe except for the garlic.)
If you omit the ketchup, you get a tangier salsa, without the sweetness. Both are good. Most people opt for the ketchup inclusion.
