Eggs Benicky, (creamed heaven with toast & bacon)

This is my version of Eggs Benedict without a poached egg. The creamed eggs make the hollandaise sauce combined with the eggs itself.

 

 

 

 

 

 

 

 

 

 

It is a Food Somersault in my book and a real treat for a gourmet breakie or anytime you feel like something special.

I watch a fair bit of the food network .  One episode I recall featured Laura Calder creating a fluffy creamy egg dish, the French way, keeping it simple. Just plain old eggs and butter and cream (optional)?   This intrigued me since I am French Canadian and I have ancestry dating back to Normandy France but I’ve never been to Europe so far.  Anyhow, this dish looked interesting enough for me to test it out .   No brisk scrambling and destroying of the light gentle egg, respect the egg and you will be rewarded.

This dish as I recall was recommended to include a nice crusty earthy bread and dipping is allowed.  I tried this and died and went to heaven.  But this twist I must say will have your jaws smacking and your lips licking, good bye ketchup or HP.

The hubby can’t get enough of it. Here is one version I made today.

  • 8 whole eggs (large size)
  • 1/4 cup 18% cream
  • 3 tbspn butter (salted)
  • 4 toasted malt bread (or english muffin)
  • 4 Campari tomatoes, sliced thin
  • 4 1/2 slices of good quality bacon (I love Buckingham’s bacon, local market in Oshawa & Brooklin)
  • Lots of patience stirring

(You should have a little leftovers and can make 3 more for the next day or totally indulge it is worth it.  Note when reheating it is tricky to keep it from cooking/gelling like a regular egg.  )

DIRECTIONS:
Beat the eggs really well

Add the cream and mix again (by hand)

Add the butter to a NON STICK large frying pan.

Melt butter and once melted add your eggs and mix well.

Over the next 15 minutes to half hour (this is where i’m super slow), mix and mix until it starts solidying a bit but must ensure it stays creamy and no lumps allowed. I use a plastic spatula to mix and pull away the eggs from the sides of pan and bottom.

  • Toast your bread
  • Top with 2 small slices of tomatoes
  • Add creamed eggs gently
  • Add slice of bacon
  • Decorate with sprinkled parsley or fresh parsley
